100% Chardonnay
Aged for 10 months on the lees, subtle brioche notes and hints of vanilla and butterscotch linger on the palate. The essence of sweet melon integrates well with the oak elements giving the wine structure and depth.
Grapes are hand harvested and whole bunch pressed. After a 24 hour settling it undergoes alcoholic fermentation in 225 liter French oak and further matures in oak for 10 months before bottling - 10 % New Oak.
