Miss Molly Bubbly grapes are whole bunch pressed and undergo primary fermentation in the traditional manner. The fermented juice (base wine) is then matured sur lie (on the lees), in bottle, for a period of 12 months. During this maturation period it undergoes secondary fermentation.
